Welcome to the Instructure community, we're glad you found the community and posted your question here!

Unfortunately, I don't think there is an option to hide the right side of the screen as that's basically built into the basic design of Canvas.  I know this isn't the news that you probably wanted to hear, but I wanted to at least provide an answer for your question.
