Hi @Ryan-Allen,

A third approach, in addition to what @Chris_Hofer and @Jeff_F have already shared, would be to use the Canvas API to accomplish this.  If you have anyone at your school/institution with programming skills, the Canvas API or Canvas Data 2 approaches may be the most viable (the exact one depending on their skills or level of comfort with either approach).
