My "People" Module on the left column listing has the closed eye next to it meaning it is not visible to the students. How do I get rid of that. There is no "publish" tab anywhere on the page when I open up "People." Also, once available, are the students able to see the email addresses of their peers?

Hi, @bretg , to make the People tab in the course navigation visible to students, you'll need to adjust that navigation item in the course settings, as described in How do I manage Course Navigation links?
Turning to your second question, the answer to this might depend on whether your school has enabled personal profiles or not (How do I edit my profile in my user account as a student?) I did a quick test in a course that has profiles enabled, and determined that a student can see whatever the user has provided on their profile. The email address is not listed there by default, but a user can choose to customize it.
Hi Bret,
You just need to make this option visible to students in the course navigation menu that is found in the settings of the course. Here is a link to some documentation that will walk you thru doing this (https://community.canvaslms.com/docs/DOC-12933-415257079 ).

Hello, @bretg .
This article from the Canvas Instructor Guide will show you how to enable and disable course navigation links: How do I manage Course Navigation links?
Best,

Hi @bretg
Very easy process..........
You can learn more at How do I use the Course Navigation Menu as an instructor? and at https://community.canvaslms.com/docs/DOC-12933-415257079
I see that 3 of us were working on an answer for you at the same time, and I lost the race.
