[Discussions] Add logs similar to quiz logs

Problem statement:

With ChatGPT and other AI tools being available to students easily, we need a way to track what students are doing in discussions, in the same manner that we can see what they are doing in quizzes. I can't see if students are cut and pasting their discussion responses, or if they are generating a response in times that would be impossible for a person to generate responses in.

Proposed solution:

I would like an identical feature for discussions that has already been implemented for quizzes.
