The process for one page is:
I need to do this for some 100 pages! Is there a simpler way than going through all those steps for each page?
Also, I might want to change those dates for multiple pages.

For pages, I believe this would all be a one-at-a-time thing right now :(. For assignments, there is a bulk date editor, but no such thing exists for pages at this time. You could certainly submit that as an idea for Instructure to consider adding to Canvas in the future. Since pages really are just getting more date-based functionality now, it might be a good time to submit this idea so it gets some visibility.

I found a way!!!! It's called MultiTool -- I found in navigation bar; it's an external tool made by https://cidilabs.instructure.com/
It's really easy to use and a huge timesaver. The downside is that I can't find any documentation for it. But that's not that bad, as it's really easy to use.

FYI, the site you provided goes to the Cidi Labs / Instructure login page rather than their company website. Cidi Labs' official website is located at: http://www.cidilabs.com/. Also, you can find help articles about their products by going to their website and then clicking on "Support" >> "Request Support". From that page, click on the "Knowledge Base" link on the right side of the page...which goes to: Cidi Labs Help Center.
Also, yes, the Multi Tool is part of the DesignPLUS product. There is a cost to DesignPLUS, but it integrates nicely into Canvas.
