I changed some notification settings and am suddenly getting push notifications and emails when an assignment is created, which is very frequent. I can't figure out which notification option controls this; I looked through multiple times and there doesn't seem to be an option for "assignment creation" or something similar.

It is possible to adjust notifications for your entire Canvas user account ( How do I manage my Canvas notification settings? - Instructure Community - 615326 ) and for individual courses ( How do I manage notifications for a single course? - Instructure Community - 615325 ).
According to the Canvas Notifications resource document at https://community.canvaslms.com/t5/Canvas-Resource-Documents/Canvas-Notifications/ta-p/387041, there is a "New Graded Assignment Created" notification trigger that fails under "Course Activities" and "Course Content".
It looks like you already have that notification turned off. Approximately when did you turn it off? Since turning it off, have the notifications stopped?

Hi @BrandtEggers - to build on what @dbrace shared, I think the image you shared is of your entire Canvas account notifications, where the setting for Course Content is turned off. Can you go to the specific course and click the View Course Notifications button (its on the course home page -- on the right you'll see additional options/button) and see if Course Content is turned ON for that course? The Course settings will override your Account Settings.
Does it happen for all courses, or just one specific course?
You cut off the image below it, but there should be a dropdown menu near the top of the screen where you can select either "Account" or one of your courses.
