So when I uploaded my old course into a new course all my old assignments/quizzes (that were created in the new version)  got uploaded, but got put into the classic quiz version. Is there a way to convert them back? Or am I going to have to just recreate them in the new quiz version?

You should be able to click on the three dots next to the individual quiz (in the Quiz landing page) and choose "Migrate". It will change them to New Quizzes. If Migrate isn't an option, you may have it turned off in your course settings ("Settings" in course navigate, then "Feature Options").
