Sounds like you are wanting the new feature called Checkpoints.  Checkpoints should be available in the near future. Check outCheckpoints Release Update: Moving to Q4 for a Polished Launch for more details.

Hi @benjamin_kiraco,

After Instructure releases the checkpoints feature for discussions to production, check with your Canvas team because the feature is set to be disabled and unlocked by default but they might change the default to disabled and locked.

This is documented in Canvas Release Notes (2024-11-16) under "Multiple Due Dates for Discussions".  Make sure to review the FAQ document that is available in the release notes.
