We want to do an audit of a course before revising the content. To help facilitate this project, we want to create a spreadsheet of all the content in the Modules so we can gather feedback on each item and the organization of the content. We would also want a spreadsheet of the different Pages, Assignments, Quizzes, and Discussions so we can gather feedback and remove anything that is no longer in use, etc.
We've tried to manually copy and paste these into a spreadsheet but it takes a while, and Discussions you can't copy at all.
Is there a better way to do this that we aren't seeing? How do other organizations do an audit or review course assets and structure in a way that is organized?

If you are looking for a tool that helps with course clean-up, you might want to take a look at a paid product that integrates with Canvas called TidyUP from Cidi Labs. TidyUP scans your entire courses and looks for unused files and other course content to help you reduce clutter and free up some of your course storage space. If you are not a Canvas administrator, you might want to have a discussion with your school's Canvas administrator team (or someone from their Online Learning / eLearning / Distance Education team). They could then have conversations with the folks at Cidi Labs to see if purchasing would be an option for everyone at your school. I believe that downloading Excel /*.csv files is possible.

A third approach, in addition to what @Chris_Hofer and @Jeff_F have already shared, would be to use the Canvas API to accomplish this. If you have anyone at your school/institution with programming skills, the Canvas API or Canvas Data 2 approaches may be the most viable (the exact one depending on their skills or level of comfort with either approach).
