How can I make the gradebook display both the current average and the final average for each student in the teacher's gradebook? I see that the data is available when I export the gradebook but I would like to show both values in the gradebook. Also, I don't want to set all grades to zero at the beginning of a course. The course does not use assignment groups.

There is no way to view both the current average and final average in the gradebook. I am assuming that you have all the assignments posted and that some have been taken others still need to be graded. The total column will show the current grade for all the graded assignments. So you can see the current average. However, the final average which would be the grade based off of all published assignments - whether they are graded or not - is not visible in the gradebook - only in the download as you mention
