I am glad that you know how to do that. We do not always know what people know and the screenshots that you provided did not show the options that are available when using the "Set Default Grade" feature.
Below are some pictures that I just took showing that everything seems to be working as it should.

If you are not experiencing this and somethign else is happening, I would recommend either (a) contacting your school's Canvas team or (b) if avaialble to you, contacting Canvas Support directly, or (c) providing us with more information and we can continue to look into it with/for you as best as we can.

Yes, I know how to do that, but it will not fill the grades. It notifies me that no grades have been filled. The screenshots were to show my settings.

From your pictures I'm not sure if you're clicking on correct thing? But the pics above by dbrace are the method that works for me. Three dots on the assignment column, then set default grade. I think maybe you're editing the late grading policy instead?
