Is it possible to hide grading totals until a later date in the semester? I want students to see the graded assignments, but not the overall total grade at this time.

Yes, go to your course Settings, scroll down and click the "more options" link, check the box next to "Hide totals in student grades summary," and then make sure and click the "Update Course Details" button.

Is this something that we can do as an Admin for all of our courses? I would like to make this a default setting for all courses in our account.

It would be useful if Instructure delivered on this fully by getting the setting properly signified to instructors within the Grades area. At the moment, depending upon assessment setup their is a hotchpotch of 'cross-eye' symbols against a student's invididual grade under the Total column (seems to be if a constituent part has been graded or not). What would be much better is if the column header for Total had the cross-eye symbol there instead to give our users confidence in the system

yes completely agree. why does this column behave differently from the rest?? we have calls all the time from academics nervous that the totals are visible as they don't see the eye symbol at the top like the other columns!
