Absolutely! Yes, I do mean creating a new Canvas Announcement. The best way to go about this would to be just copying and pasting everything over to the new announcement in the new course. While at times it can be time consuming, this is one of the best ways to get this done.
The reason why the U pops up when you add announcements to a new course that were imported from an old course is because several courses that people use can come from other people (instructors) that may not be from outside your school district or organization. That being said, to maintain confidentiality and other things like that, Canvas automatically puts the U in the profile picture for everyone.
Would it maybe be easier for you to take some time to just copy and paste those announcements into your course one by one, and then just schedule them for publication whenever you want them to go out? I feel that dedicating some time into doing this would be a good thing to do, then you can get it all done and out of the way and not worry about making them all at different times.
I'm sorry that there's really no other simpler way to do this, but I hope I am helping in some way! I've been in similar situations before myself with importing some of my courses, and this has been the best solution for me.
