There are several ways one could interpret your question, which is why @Chris_Hofer asked for clarification.
If you have a course that was acting as a course template and the course was deleted from Canvas, then the How do I restore a deleted course in an account? lesson in the Canvas Admin Guide can help you restore the course itself.
If you have a course that was acting as a course template and the course is no longer acting as a template, you make sure that course is enabled as a course template and then select it as the course template for the account.
Someone might use the word "template" to refer to something else. Canvas has Course Templates, Blueprint Courses, and Canvas Commons that all act as forms of content distribution. That page, has links to resources for all three at the bottom. Those involve a native Canvas template solution.
People frequently mean words in ways other than the way Canvas uses them, so "template" to you may not mean a course template from Canvas. It might mean a template that you see within Canvas. Many schools utilize a third-party solution such as Cidi Labs DesignPLUS for templating.
Getting a better idea of the problem will help people provide a solution.
