How do I locate a course that was removed from canvas? It is not in my archives

For a question like yours, I think it would be best for you to reach out directly to the folks at the University of Central Florida.  If you have checked your "Courses" >> "All Courses" screen within Canvas and still do not see the course(s) you are looking for, then you'll want to reach out to people at UCF.

How do I view all my Canvas courses as a student?

I searched their website a bit, and I found this page which seems to have some good contact information:

UCF may have policies in place as to what courses you have access to and when, so you'll want to ask about that, too.  Hopefully you'll be able to connect with someone at UCF soon!
