How to setup outgoing mail for our Azure Canvas instance?

Hello,

We are spinning up a new instance of Canvas as an Azure VM. We are trying to get email working with it and see two options:

1. Spin up basic Sendmail server and use it (easier, but I think might result in more blocked mail)
2. Route mail through our on-prem linux mailserver and have it send out emails (probably more complicated but may result in less blocked emails)

Are there any guides or tips as far as getting this setup for our Canvas instance?
