How do I disable the "summarize discussion" feature and all other AI features for both myself and students?

The "Summarize Discussion" feature is only available to teachers.
As long as it has not been "locked" by your Canvas admin, you have the ability to disable it for teachers by:

Are there any other AI functions on Canvas, and I can remove them too?

There is a "Smart Search" function in Canvas, but it might not be enabled yet by your Canvas administrator(s). You'd have to talk with your Canvas admin team (or someone from your school's Online Learning / eLearning / Distance Education team) to see if it is enabled or not...or if they plan on enabling it any time soon.
