That is a great idea. You can always submit your thoughts as a new Idea here in the Community so that it could be later evaluated by Community members and considered for development by Instructure. You can start the submission process by going here:
Canvas Ideas and Themes - Instructure Community (canvaslms.com)
Then, click on the blue "View and Submit Ideas" button. On the next page, click on the blue "Submit an Idea" button.
You'll also want to follow the Guides listed under the heading "Ideas and Themes" located at:
Instructure Community Guide - Instructure Community (canvaslms.com)
...as these documents will tell you how to formulate your ideas.

Immersive Reader should already be available in assignments. I checked this Guide, and assignments is listed as one of the areas that it is available. Unfortunately, it is not available for quizzes...nor do I know if it will be...at least not for current Classic Quizzes. I have no idea if it could be available for New Quizzes.
Sorry that I only have good news for you for part of your question, but I hope this helps to answer your question.
Okay, that would be a great feature to add, especially to the quizzes, since so many of our students with disabilities receive oral accommodations when being assessed.
