Does anyone else notice the inconsistency here?
It starts with an issue of need to regrade by changing the correct multiple choice answer on a 3-point question. The original point value is 0.
Then, after the regrade, look at how it appears:
Why is "original score 1/3 points"?
This is important because the regrade score is now 0/3, but shouldn't it be 3/3? The student's answer is clearly highlighted in green.
This is important because I do not think that document explained the last step at all. It just ends with, "View Question Regrade" and "Once the questions has been regraded, you can view the original score [1] and the regrade score [2]." Why do you need to regrade after having set up and clicked the Regrade button on the previous step? If this means manually doing something for each submission, I think that should be explained here. And what should one do, click another button called "Regrade" and/or manually change the score?

If you feel that any of the Canvas documentation needs clarification, you can submit your feedback to the Documentation Team. To do this, go to the Guide in question...for example:
How do I regrade a quiz question in New Quizzes? - Instructure Community (canvaslms.com)
Scroll to the very bottom of the page. Just above the dark blue section at the bottom, you'll find a blue "Leave Feedback" button. When you click on this button, a form will appear on your screen where you can leave your suggestions on how you think that Guide could be improved/clarified/etc. The Documentation Team will review your suggestion(s) and make any appropriate edits/changes.

Hi @jbraverm! Thanks for your feedback on that guide. We've updated it, so see what you think. You need to click to the Regrade button to make changes to the correct answer or the points, and then you need to click the Regrade button to perform the regrading on the existing submissions. Then, you will see the regraded scores; you don't have to click anything (though you may need to refresh). I hope this helps! Jen
