In the traditional gradebook, I thought it used to automatically change the "Missing" status to "Late" when a score was input. This is for "no submission" or "on paper" assignments.
It no longer does this, and manually adjusting all statuses takes a long time.
Am I missing a setting or something?

Unfortunately, I do not recall what the exact experience was. Maybe someone else in the Community does.

I believe the functionality you're describing would only work for "online" assignments, not for "no submission" or "on paper" ones. This is because Canvas uses the submission date/time to determine when something is late, and that info isn't available for "no submission" or "on paper".
On one hand, you could perhaps request that the time you're grading be compared to the due date and used to make a determination. On the other hand, grading doesn't usually happen immediately after a deadline, so that method would be wrong in a lot of cases too.
This is a tough thing to say, but I think you're likely stuck with manually switching the status for the way you have things set up.

I do not recall what the experience was but what I can say is that:
Let me as you this question. Logistically speaking and from solely Canvas perspective and automated manner, how can the Canvas LMS know that a submission was either "Missing" or "Late" when a student is not submitting into Canvas?
In my understanding, it would seem that the submission status would need to be changed/set manually by the instructor.

I mean that after I have manually input "Missing" as their score past the deadline, then I go to manually input a score for them, it keeps the status of "Missing" even though there is a score other than "zero" or "mi" input.
In the past, and on some digitally submitted assignments, when I input a score it would automatically change the status to "Late" instead of keeping it "Missing".
Does that make sense?
