Moderating Assignments per Student

When limiting the number of submissions for an assignment, I am unable to grant an additional attempt to just one student, like moderating a quiz. A previously published solution to this issue is to wait until after the due date on the assignment and then, change the due date and assign it only to the student who needs additional attempts; however, at my institution, the due dates on assignments are locked at the BluePrint level and therefore, this workaround does not work. 

Is moderating an assignment on the roadmap similar to moderating a quiz?

I, too, would like to be able to give an extra submission on an Assignment to just one student, rather than to the entire class.
