Previous Courses

I just logged in to try and share last years courses with new teachers and the courses from last year are completely gone...

Any clue as to how I can find them?

Generally speaking the Dashboard only shows current courses.  You can find all of the courses, including those from past terms, under Courses > All Courses.  Canvas has a page showing the process at How do I view all my Canvas courses?

To further add to this, if you don't see your previous courses in the all courses list, that means your local Canvas team doesn't let completed courses be viewed by students/teachers once they are over, or perhaps has even completely deleted the course(s) for some reason.  I'd definitely encourage you to contact the Canvas team at your school/institution to find out more about their specific policies around course access.
