Can I allow students to complete a quiz over a period of time? Can they save it and go out and come back in and complete it? Or does it always need to be in one session?

If you are using current Classic Quizzes, this Guide may be of help to you...as it shows you all the options you can set for time length as well as availability dates for your quiz. If you are using New Quizzes, there are a couple Guides that will help you with the availability settings and time limits:
