Thank you for posting the request and opening a conversation about this topic. Over the years, the Community has seen many instructors and students looking for this functionality. I'd like to refer you to the "Special Characters" In Canvas blog for more context around the Product Team's decision to not add special characters or multiple languages to the RCE. I know it's not the solution you hoped for, but I hope the openness and context is helpful.
