Since AI tools make it terribly easy to generate a text - for instance an answer or a short essay - teachers at my school request a text box in which students can submit their response only by typing, making it impossible to copy-paste the work of others or chatbots in one's submission.
This corresponds with new exam forms currently developed by the Danish Ministry of Education.
Is that possible?

No, this is not possible within Canvas directly. While there are potentially other add-ons out there that would likely require a subscription that could assist with this, you can't do this in Canvas. I'm also not sure how it would fully help, because students can still just copy it by typing it out.

At my institution, we have more faculty using virtual proctoring (like Respondus LockDown Browser or Honorlock) even for something that they consider to be an "assignment".
They do this by creating a quiz in Canvas. In the quiz they include the appropriate number of questions as essay questions but it would be possible to use other question types.
