how do I view all students in the grade book?

If you are an instructor, there are a few places that you can view all your students.  One place is the "People" page of your course:

If you want to see a listing of your students in your "Grades" page, just click on the "Grades" course navigation menu item on the left-hand side of your screen.

You can also export a listing of your students and their grades as a *.csv file ... if you prefer to do that:

Finally, there is another way to export your course roster ... via "New Analytics":

On this screen, you'll find that one of the options is "Course Roster" where you can click on the "Run Report" button.
