Some quizzes are locked in my course and will be opened in week 6 and later in the semester. However, the grade book shows 0 for students, and the final grade takes these 0s into calculation, and all students fail the class. Students worry about their grades. I know these untaken quizzes usually show - in the grade book. How can I fix the problem?

We started our fall classes last week (8/26) and had (and still have) widespread reports of similar behavior of the gradebook giving zeros from assignments that are set as future dates. We have been setting the default grade as a "-" with overwrite selected to reset the grades.
Instructure knows it's an issue and has it listed on their Known Issues page, but have otherwise been silent on a resolution or alternate workaround. We're asking everyone who is having the issue at our institution to submit a ticket to hopefully get them looking at it seriously, or at least just give us updates.
Just a few things to clarify.
Has it been assigned?
Is there a due date on the assignment?
If you go to the submission for a student that has a 0, does it have a missing flag?
Do you have the option to autograde missing assignments turned on?
This is curious behavior. It should not be giving a zero automatically unless you have it set to given 0's to missing assignments, which does not occur until after the due date has passed. Hence the questions.
Following up on @JeffCampbell's response I would check if you have set the grading policy for missing submissions as automatic 0, and then check if your due dates are in the past. This caqn happen if you import material from a past course without clearing all dates

Your solution of having teachers submit a ticket is solid. Instructure may be silent because they are working through why this is happening and how to fix it. I hope this gets fixed soon. If you have a ticket, you might let them know that you found one way to reset the grades. It may help them in diagnosing the problem.

Hello. I'm having that issue now in Spring semester. Just two assignments have zeroes already appearing in the gradebook. I tried to enter the "-" symbol into the gradebook to get rid of the zeroes but Canvas said there were "invalid grades" and then turned them all back into zeroes. I'm not sure how to do the overwrite function. Can you offer some guidance on how to do that? Thank you. Thomas
Hello again. I figured out that I need to click the three dot "hamburger" at the top of the column with zero grades entered in the gradebook, and then "set default grade" for everyone in the class with the "overwrite already entered grades" box checked. Thank you.
