I want to use differentiation tags to group students and then create a course pacing option based on the differentiation tag. For example, we have full-time and part-time students (in the same section) part-time students get longer to complete the course, meaning they have different due dates. Rather than set each assignment due date up for each student type, we want to set up a default due date timeframe for the full-time students and a different one for the part-time students. Is this possible?

According to our documentation " Course Pacing can be managed on a course level or by individual students" so differentiation tags are not supported.

Not an answer, but it is a good idea, which you'd normally have to submit as an Idea for consideration.
But since both features, Course Pacing and Differentiation Tags, are still in their feature preview stage and so are under development, perhaps you can ask about this in their group hubs:
