I have a student who changed classes during the first quarter of the current school year but he is now showing up on two class rosters and gradebooks. Is there a way to remove his name from the old class he is no longer enrolled in?

You could mark them as inactive in "People" which will also keep them out of the course and stop them receiving comms etc. (Deletion is a bit to permanent, but their data still 'lurks' and will reappear if a deleted student is readded).
Do check with your Canvas Admins that this isn't being handled via your Student Information System first though. If that is the case then an adjustment in the student record should feed through to Canvas Inactive or withdrawn status.
