When embedding the Crash Course videos for my students I am able to embed some of them through the YouTube link in Canvas, but not all the Crash Course videos show up as an option to embed. For instance, I was able to embed the Northern Renaissance Crash Course but the Florence and Renaissance Crash Course video did not show up on the list to embed.

Generally, Canvas supports almost all video embeds, at least in my experience.
Are you trying to embed a YouTube video into your course, however when you right-click on the YouTube video there is no option to embed it? If that's the case, then the video owner disabled embeds for that video, as they likely prefer and wish to not have their video embedded on sites, or on platforms such as Canvas LMS, and it can be for different reasons.
That being said, there's not much that we're able to do about this, since the video is coming from YouTube.
However, if you do have the embed code for the video, and you're trying to embed it on Canvas however Canvas is not accepting that video embed code, then either Canvas is denying that code for some specific reason, or the more likely reason why is because the code is invalid for some reason, and it doesn't work. And that there is just the general technology that we all know and love today.

It just seems odd that I could embed Crash Course #1 Medieval Europe and Crash Course #3 Northern Renaissance, but I could not embed Crash Course #2 Florence and the Renaissance.
@vcarmer It's likely an issue with the platform/software you're trying to embed the video from, rather than it being on Canvas. That being said, I recommend you reach out to that platform's support team for more information in regarding the video embeds for courses in Canvas for your students.
My workaround, when this happens, is just to embed some other video that DOES work from that handy little linky-thing Canvas provides . . . then open the course page for editing, click the </> icon on the lower right corner to get into HTML view, and edit the video references. Copy the video ID from the YouTube site, be sure to edit other stuff (like title), and you'll be good to go. Love those Crash Course videos for my students!
Example: Embed the Northern Renaissance video. In HTML view, you'll see its ID is EuzAbE-kPkM. Overwrite that with the string "tecocKSclwc," which you can peel off the video ID at YouTube for the Florence and Renaissance video, whose link is: https://www.youtube.com/watch?v=tecocKSclwc
