I have many quizzes made using the new quiz format. I have been using them successfully all year. now this morning they will not work. I get an error message saying "Couldn't find valid settings for this link" When I go to make a new one, it automatically reverts me to the old, classic quiz mode. Is anyone else having this issue?

First, go to the Settings > Feature Options area of the course and confirm that the "New Quizzes" feature option is enabled in the course.
If you don't see that setting, contact Canvas Support at your school, since the availability and default settings for New Quizzes is something that is controlled by the campus Canvas admin.

Then you should make sure that "New Quizzes" is (still) enabled in your courses. If it is not enabled, you should contact the Canvas team at your institution. If it is enabled, you should either contact your Canvas team or Canvas Support.
