I set the grades to be hidden for one of my assignments and graded it using the speed grader with a rubric, I typed my comments and grade in rubric. However, I received emails from students questioning their grades. It seems that they are still able to see the assignment rubric grade results through the Canvas app, even though the grades were set to be hidden.
Is it possible to resolve this issue? Thank you!

Yes, this is a glitch, and I also learned the hard way. This glitch has been reported for years.
I found that I could avoid students seeing their grades through their rubrics by changing the grading policy to "manual" in the Gradebook and then hiding the grades. I had two take both steps. Just "hiding" the grades in Speedgrader wasn't enough.
Try testing this out with your "test student" and then go into Student View to verify.

This is marked as solved but it is not. This is still a glitch and I had no warning that my students would see the rubric comments. They need to be hidden anytime the grades are hidden.
