The members of this community will not have the level of access needed to help fix your situation. I would suggest reaching out to your institution's IT department. They are going to be able to put you in touch with someone at your institution who has admin access to Canvas and can better assist you in a more timely manner.

There is no way to access IT at SBCC. instead we need to go in circles for hours and ask professors who are not always helpful. So besides a "delay," do you have something else for us? I am trying to see final grades and my class has disappeared from Canvas.

Unfortunately, there really isn't much more that can be said here in the global Instructure Community. Each school/institution has their own enrollment processes and procedures and their own methods for transferring enrollment information to Canvas. The only people who can give accurate information and answers about specific enrollment / course access issues would be from your school/institution (probably in the eLearning / IT / Digital Education / Registration areas).
Apologies in advance if those departments aren't very responsive at your school/institution, but I hope they do eventually respond to you.

By SBCC, do you mean Santa Barbara Community College? If so, their IT Support for students is here: https://www.sbcc.edu/it/studenttechsupport.php

It appears that grades at SBCC are exported by faculty and sent to Admissions. You might want to contact that department: https://www.sbcc.edu/admissions/ to ask about viewing your final grades. Likely, SBCC has a term end date and courses are closed once that date is hit.
You can try one thing to see if it shows up in your course history. Sign into Canvas, then click on Courses on the left side (usually right under Dashboard). At the top of the panel that opens should be a link that says All Courses. Click on that and scroll down to see if you have Past Enrollments that list your course. You might be able to open it from there and get into Grades to see your final grade in the course. If not, then you will need to reach out to Admissions.
As a side note, it appears that SBCC's page for Student Canvas Support merely suggests going to Canvas and using the 24/7 chat. While that may work, you provide an excellent reason why they should have someone at SBCC as a first stop for issues such as yours. Canvas Tech Support would not have direct access to SBCC's systems anyway, so if there was an issue in which you were not properly enrolled into a course and cannot see it on your dashboard, Canvas Tech Support would likely redirect you to tech support at your college. Someone at SBCC who has that access is better equipped to assist. Doing some digging, it appears that there is a Faculty Resource Center located in ECC40. Some YouTube videos for faculty suggest that there is someone at SBCC that is familiar with Canvas enough to help faculty, the director of FRC. That might be a place to start if you wanted to at least suggest the need for someone at SBCC that can help answer questions regarding course enrollment issues on Canvas (such as not seeing a course you should see). https://www.sbcc.edu/frc/
