This sounds really strange. Would you both be able to post a screenshot of this? But, at the same time, I want to be careful that you aren't revealing student names and student grades in those images. Just trying to understand what might be going on to provide some help.
Have you also tried clearing your browser history/cache or trying a completely different browser? An up-to-date version of Google Chrome and/or Mozilla Firefox are good choices...though I've also had some good success with the Microsoft Edge browser on my own Window 11 laptop.
After you clear your browser cache, close the browser completely, restart the browser, and then try signing back in to Canvas.
And finally, just to confirm... your "Grades" course navigation menu on the left-hand side of your course should typically not have the crossed-out eye icon next to it. If it does, that means it is not viewable to your students, and you would need to un-hide it. To do this, you can use this Guide to make the "Grades" course navigation menu visible to your students:
