When other teachers share content with me I try to import and the assignment/quiz doesn't show up in my Modules.

Can you please describe the process that you and your fellow instructors are using to share content with you from one course to another?  Are you using the "Send to..." option when you click on the three-dot kebab icon to the right of a content name?  For example:

• How do I send a page to another instructor?
• How do I send an assignment to another instructor?

If you are using the method described in either of these Guides, then you'd also need to follow the directions in this Guide:

• How do I manage content shared to me from other users?

Another option for you and your fellow instructors is to be enrolled in the same courses and then use the Course Import Tool to import content from one course to another.  How do I copy content from another Canvas course using the Course Import tool?
