Sorry for the situation you're in, that sounds really frustrating. Unfortunately, while users here in the global Instructure Community can answer a lot of questions about Canvas, we don't have access to your account/course/Canvas instance so we really can't give you a specific answer to this one. The best person to answer would be your instructor, but I know you said you already reached out to them, so the next best place I'd recommend contacting would be your school/institution Canvas team (usually in the eLearning / IT / Digital Education areas). That team may have access to your course and be able to provide some guidance, but they may also redirect you beck to your instructor as well since every book/course has a slightly different setup.
