I am using the Pearson MyLab Math HW system with links for each HW embedded in canvas. If I want each HW to open in a new window I need to set this individually for each HW. Is there a way to make this the default?

Unfortunately, I don't think there is a way you can check that box by default as a teacher on your own. Your Canvas administrators may be able to adjust some behavior, but it would affect all courses, and there may not be agreement among all teachers on the desired behavior.

Are you setting up the links in the Rich Text Editor (RTE)? If so, you can choose either course links or external links (and all external links open in a new window).
The links are created from the “MyLab and Mastering” app (activated from Navigation in settings)
Was there a new update over the summer which changed links opening in the new tab? I used to be able to have student opening canvas assignments embedded in canvas to automatically open in a new window/tab. Control K for this does not work and the option to have the assignment open in a new window/tab does not exist.
@ElizabethC2 I was able to find the setting for this in canvas. My problem is that I need to do this individually for every assignment. I really wish there was a way to make this the default.

Thank you for sharing. I do that that set when I embed an assignment in Canvas. My issue is that I create a daily agenda on a page. Here I link assignments created in Canvas inserting with a "course link". When they clink the link, it does not open in a new tab. It take the student away from the daily agenda page where there are often more links they need. Students have to go back to Classlink to reopen Canvas (if they go back, they do not have the necessary tab open). I used to be able to set it to open in a new tab/window. This option was removed due to an update over the summer. Control K does not work for "course links". Not sure if this is a setting that was not adjusted after the new update by my district or if Canvas took it away.
