When I am missing a student assignment, I mark it as such. Later, when I enter a grade for the late assignment, the missing status stays on the grade, even though there is a grade for it now. It is confusing for the kids when they go to look for missing work. Is there not a way to make this go away automatically, without me having to go into the clunky speed grader and remove it manually each time?

I'm pretty sure the "missing" only goes away automatically upon grading if it was automatically added by Canvas for an online assignment after the due date passed. If you're manually adding the missing tag, I think you also need to remove it manually as well. I can't say with certainty, but I have a feeling the thought process is not to have automation overwrite manual changes (and I know I've seen people here post scenarios where grades are entered but work is still missing).
I could be wrong about this, and if I am I'm sure someone else will jump in and let both of us know.

This has not been observed on my end, but I have two thoughts.
First, it sounds as if you are manually setting the missing flag. I have mine set up to automatically set it (Settings menu in Grades). When I enter a grade for someone who is marked missing, it automatically updates to Late. I'm not sure if this behavior is consistent when the flag is set manually.
Second, when you say the status is not being removed, are you referring to Canvas or your SIS? We use PowerSchool. The missing flag status updates correctly in Canvas, but will not update correctly in PowerSchool. Even when the grade sync sends the grade to PowerSchool, the missing flag remains on PowerSchool until I manually remove it.
Maybe I am blind, but I see the the person at 2:20 tell me that I can enter a grade and the "missing" goes away, but never does she tell me how to make that action happen. I enter a grade and it stays "missing".

I believe this is correct based on what I have observed. If manually applied it has to be manually removed. This is because there is the ability for a teacher to mark something that has been submitted as missing because the wrong thing was turned in.
If automatically applied, the "Missing will be changed by the system when a submission is made into "Late."
