Hello,
I'm writing to you because I'm having a problem adding deadlines since the Canvas update. Indeed, when I assign an assignment to different dates for each student, I click on “apply”, “save” and yet NO deadline is applied and updated. I don't know what to do to solve this problem, would you have an idea ?

Thanks for your message. I've finally solved my problem: in fact, the deadlines weren't attributed because ... I was using the platform in French! This is one of Canvas' current bugs. As a result, I changed the language to English and since then, everything's been working normally!

I am sorry you are having trouble assigning different dates for each of your students.
I know with the recent update, the process for assigning different due dates to students has changed the UI a little bit in the last couple weeks.
Just to rule out some simple things, are the due dates you are applying to the assignment falling within the course Start and End dates?
After selecting the Apply and Save, are you seeing any odd error messages?
Does clearing the cache and cookies (MAC) (PC) make any difference at all?
Do you see this same behavior while using a different browser?

I've tried everything but unfortunately nothing works. My Google Chrome is up to date; I've cleared the cache, and we've tried on my Ipad and on my partner's computer. The 'due date' remains empty. And no error messages when we apply and save.
Would you have another idea of what to do? Should I change any settings in the course? I haven't set a start and end date for any of my courses, and so far it's worked. Maybe I need to start setting dates?

I tried replicating this problem. It works for me. Are you clicking the Add+ button to assign different dates for different students? If so I apologize for asking
Okay this is a long shot but is another assignments 'Assign to' to also open as I just came across this in Open Issues, where Assign to won't update if the Assign to tray for another assignment is still open:

Thank you very much for your help. No, when I assign a job, only the window for that job is open. I've tried everything and the problem persists. I've attached a video where you can see the problem live when I try to assign a job.

I know that you may not have directly asked about this, but I wanted to let you know that on Wednesday, August 28, 2024, Instructure will be reverting back the "assign to" layout that they had implemented earlier this Summer. You can find more details about this at: Canvas Deploy Notes (2024-08-28) - Instructure Community - 612024 (canvaslms.com). Hope this helps in some way.
