Hello,
I have 75 students this term and many do not use gmail. I do not want to ask them to create one just to populate a shared spreadsheet I have inserted in Canvas LMS. Is there another product besides google that will allow students the ability to populate a spreadsheet?

If the students are just entering information, you could create a table on a page. Then under "options," select " teachers and students" as "users allowed to edit this page."
This is a really simple way to allow students to enter information. They won't need to have gmail accounts.

The setting that @SusanNiemeyer referenced can be found in the "Edit Page Settings" section of the How do I create a new page in a course? - Instructure Community - 1031 support article.
As far as Google Sheets is concerned, depending on the policies/settings at your school, it is possible to share a link to a Google Sheet and have it be editable by anyone.
