We would like your engineers to consider adding a feature to schedule due dates for Canvas pages. We would like Canvas to have the capability to differentiate due dates by user, rather than just one universal date. Our institution serves thousands of students across different curriculum versions and we use a system of rolling enrollment, so students start courses at various points throughout each curriculum year.

Have you looked into using the Course Pacing feature? This allows for an instructor to set the expected pacing for a course. Then, when students enroll with different start dates, it uses that in combination with the instructor's expected number of days for each assignment to set due dates.
Maybe someone else might have a suggestion. You could also consider posting this on the Ideas page. That is a great spot to make suggestions and is the starting point for where user suggestions can end up as implemented features.
