I am doing a portfolio for a class. In this portfolio, we are expected to submit examples of our work, including canvas quizzes as a demonstration for learning. In the previous format of canvas quizzes, I was able to save these as pdfs to print them out in entirety, but I haven't found a way to do this with the new format. Any ideas?

Hello @EllaHochstetler
Were you using your browser before? You should still be able to by just viewing your quiz results and clicking File - Print on your browser. If you're using something like Chrome, generally the first option is to save it as a pdf before actually printing. If you were using a different method, what was it exactly? You could also speak with Canvas Support directly and they can look at your specific assignments and assist.
