I am currently using a free version of Canvas. I am going to be quitting my position, how can I transfer my content to a new teacher(s) so they can continue teaching my courses.

I'm not very familiar with the free version of Canvas. But here is one suggestion. Could you create a new course and copy the content into it, then add the new teacher to it with full permissions and remove yourself as the teacher? (Or, the new teacher creates a course shell, adds you too it, then you copy the content into it, and the new teacher removes you.)
Another thought, could you export the course content and give the teacher that exported file?
