It is not possible to disable the Calendar area of Canvas or for a specific course or semester. The Calendar area of Canvas that is available to anyone, including the ability to manually create "My To Do" entries that are associated with a specific course or their personal calendar.
When an teacher/instructor/professor creates Canvas content and populates the content with a "Due" date, that date automatically creates a calendar entry in the course's calendar for everyone.
Regardless of the role of the Canvas user (student or teacher), it is also possible to create "My To Do" entries (either for their personal calendar or associated with a specific course, but only visible to them). Only teachers/instructors/professors have the ability to create "Events" (which everyone in the course can see).

What do you mean by disabling the calendar?
If you don't want there to be any calendar events for a course, just don't post any events on the course calendar, nor set any "due dates" (availability dates are fine) for the course.
