Course Pacing + Grade Sync with Infinite Campus

We are new to Canvas this year and our Virtual Academy is interested in using Course Pacing with some of their courses. However, since the grade sync with IC does not work unless an assignment is assigned to everyone in the section or course AND it requires a due date, we are unsure how that would work since students would have different due dates based on their start date.

If anyone has already done this and could provide guidance, that would be fantastic!
