Our students are not able to receive external emails (non-school) via their school email accounts. Is there a way to create their login/account for them in advance and give them the credentials without having to use the email link?

If you are using your own Canvas instance and not the "free for teachers" version, you can pre-create all the accounts and set them up either with a local password, or set them to use SSO sign-in credentials if they have logins for MS, Google, or a local authentication provider.
However, you will have to handle distributing the credentials--you can't do that from within Canvas.

I am using the "free for teachers" version. Is there another workaround? If I give the students a sign-up link, will they have to verify their details via email before they can use the course? Again, the way our school emails are set up is that they cannot receive emails from addresses outside of our school. This may be something our IT director could change but I do not foresee him being willing to do so.
You can't manage passwords for other users in the Free for Teacher version, so the students must have a working email that they can receive emails from Canvas in order to activate their accounts and set passwords.
