I want to hide grades so that I can grade the entire class. But when I do so, and start using the rubric, that rubric, and the comments in it are visible to students, and I am immediately besieged with comments / questions even before I've finished grading (and have a chance to go back through my grades to adjust them as needed).
Apparently this is normal behavior, according to this link. I am not really surprised, nor even disappointed, but I am frustrated and depressed that I now have to create a separate document, write all my notes there, and then paste them at the end of the process.
There ought to be a better way.
If there is and I'm missing it, please enlighten me.

Just to be sure, here is the process that @SusanNiemeyer recommended:
This is the Guide on how to use the "Hide grades" option: How do I hide grades that were previously posted i... - Instructure Community (canvaslms.com).
Finally, here's a video tutorial that you can look through if you like: Gradebook Overview (Instructors) - Instructure Community (canvaslms.com).
Please let us know if either of these were the process you were following based on Susan's initial response...so that we might be able to do some more troubleshooting with you. Thanks!
This is a quirk in Canvas. You need to do two things to keep students from seeing the rubrics and comments.
You must do both.
Then you can test whether your students can still access the rubrics and/or comments by submitting something as a "test" student, grading it with your rubric, and then going into the "student view" to see what is visible in the Grades section.
I found out this glitch the hard way, too.
That didn't work for me. I have found that I need to uncheck use this rubric for assignment grading *and* not put a score in the assessment box. Only then does the rubric not become visible to the test student. As soon as I put in a score, the test student sees everything in the rubric.
Note that I can't hide grades -- I see "No grades to post" and "No grades to show".
This means that I have to go through my grade book twice -- the first time to grade, the second time to add up the scores.
Whoever designed this system to behave like this .. would you mind answering all my student emails that show up while I'm still grading to complain about their grades? Yeah, I didn't think so ...

This isn't working for me. There are no grades to hide, so there's no option to hide them. The rubric is available with marks despite the grade being hidden.
