In researching about InstructureCon, I found these two links from last year really helpful:

InstructureCon 2015 Public Postmortem
What you take away will highly depend on what you come in with and what you are looking for. For example, I am really interested in learning how to use API's and tweaking Canvas in general, whereas you may be more interested in best practices for managing large courses or modifying courses for mobile use.
What I mean by "what you come in with", is that each presentation has a target user with incoming abilities, just like any course. If you don't know any code, an "Administrative JavaScript" presentation won't be helpful for you. If you are fairly adept at design and course delivery, a course for "Streamlining and Time Management for Instructional Designers" might be just up your alley.
(full disclosure, I have not yet attended an InstructureCon either, but reading these makes me really want to be there!)
